I’ve been meaning to share this, I know I don’t typically do recipes here, but I made this on Sunday and it was so easy and good that I wanted to share it. I hope you’ll like it too.
Cheese Ravioli with Zucchini
2 medium zucchini cut in half and sliced
1 package refrigerated cheese ravioli
2 T olive oil
6 green onions sliced diagonally, 1/4 inch thick
1/2 cup milk
1 cup finely shredded Parmesan cheese
Cook ravioli in boiling water 6 to 8 minutes, drain.
Meanwhile, cook zucchini and onions in hot oil 2-3 minutes until desired tenderness.
Add cooked pasta, milk and 3/4 cup of cheese to the pan. Cook and toss for 1 minute, add 1/8 teaspoon each of salt and pepper.
Transfer to serving bowl and sprinkle with remaining cheese.
Serve.
We ate this for dinner on Sunday and I ate the leftovers on Monday and again today until it’s now gone! I know tomorrow I could eat it again, I really enjoyed it.

I just got home from taking my daughter to her guitar lesson. She takes her lessons in a guitar studio located in the historic downtown area, it’s really a quaint area. They have the sidewalk and light-poles all decorated for Fall and Halloween. We always go in a couple of the shops while we’re down there and I noticed today that the little gift shop is all ready getting their Christmas goods in. Then I realized that we’re less than 2 weeks from November, unbelievable! Thanksgiving and Christmas will be here before we know it!
Usually by now I’m close to being done with my Christmas shopping, but to tell you the truth, I haven’t even started it this year. I know we’re going to be on a much tighter budget and I think that has caused me to hold off buying anything. I know too that I am going to do most of my shopping online this year. I feel like it’s just easier to compare prices online rather than running store to store. Of course, we can’t forget either the biggest shopping day of the year, Black Friday, that always gets my shopping juices flowing! I really don’t like to fight the crowds though so it’s all the more reason for me to shop online.
I’m signing up to receive blackfriday emails that will alert me stores have posted their Black Friday advertisements. I no longer get the newspaper delivered, so this is a great way for me to not miss out on the ads. Keeps me a step ahead because some of these ads hit the internet before they hit the news stands. By getting the ads early, I can actually plan my shopping attack and get it all done from the comfort of home, while wearing my pajamas!
My daughter hasn’t given me her list yet, but I’m sure she’ll have a video game or two on her list among other things and I’ll be looking for GameStop specials for Black Friday as well as a few other stores. I want to take advantage of those sales and discounts and save gas money on top of it.

It’s FINALLY feeling like Fall here in NW Texas! I am thrilled to say the least! I haven’t heard the air conditioner kick on in almost 24 hours and that makes me even more thrilled.
Yesterday was super windy and rainy, but it brought with it a cold front and the temperatures today are in the 60’s. It’s actually beautiful outside. The wind is light and the sun is shining. I can even leave the door open for the dog to go in and out as she pleases.
I just got back from doing some volunteer work at my daughter’s school and I found it quite funny that the office staff was talking about how they had turned their heaters on at home. OMG! Are they crazy? The temp inside this morning was 65, yes, a bit chilly, but it warms up as soon as the sun comes out. There is NO WAY I’m turning a heater on. The a/c was just running yesterday! These southerners don’t know what cold is. Not to mention, I like it when nothing is running and I don’t see my electric meter running at full speed. The utility bills here are outrageous.
Anyway, I’m just going to enjoy the day and start by opening a few windows to let the fresh air in. I’m loving this.
