Fall Recipe

I’ve been meaning to share this, I know I don’t typically do recipes here, but I made this on Sunday and it was so easy and good that I wanted to share it.  I hope you’ll like it too.

Cheese Ravioli with Zucchini

2 medium zucchini cut in half and sliced
1 package refrigerated cheese ravioli
2 T olive oil
6 green onions sliced diagonally, 1/4 inch thick
1/2 cup milk
1 cup finely shredded Parmesan cheese

Cook ravioli in boiling water 6 to 8 minutes, drain.
Meanwhile, cook zucchini and onions in hot oil 2-3 minutes until desired tenderness.
Add cooked pasta, milk and 3/4 cup of cheese to the pan. Cook and toss for 1 minute, add 1/8 teaspoon each of salt and pepper.
Transfer to serving bowl and sprinkle with remaining cheese.
Serve.

We ate this for dinner on Sunday and I ate the leftovers on Monday and again today until it’s now gone! I know tomorrow I could eat it again, I really enjoyed it.

    Funny thing is I was just looking for a recipe for zucchini. Just found out I liked it. And we have a few left over from our garden that need to be made soon.

    Valmg – I think you could pretty much use any vegetable and even mushrooms would be tasty. You’re basically just stir frying the veggies and then adding the pasta, so it’s whatever you like.
    By the way, I’ll be over to check out the meme. :-D

    Kari – It’s the one way I can get my family to eat zucchini! I also have a good recipe for tortalini soup that uses zucchini and is great in the Fall. I’ll have to dig that one out too.
