Sweet Potato Casserole

This is a wonderful recipe I got from my sister.  Not only is this dish wonderful served with Thanksgiving or holiday dinners, but it is excellent when re-heated for leftovers as well.  I will definitely be having this on my table Thursday.

 3 c. cooked and mashed sweet potatoes

2/3 c. white sugar

1/4 c. butter, softened

1 tsp. vanilla extract

1/2 c. milk

2 eggs, beaten

1 c. chopped pecans

1/2 c. all-purpose flour

1/3 c. butter, softened

Preheat oven to 350 degrees F. (175 C).  Lightly grease a 9×13 baking dish.

In a large mixing bowl combine sweet potatoes, white sugar, 1/4 c. butter, vanilla, milk, and beaten eggs.  Mix well.  Pour mixture into prepared baking dish.

In a medium mixing bowl, combine brown sugar, chopped pecans, flour and 1/4 cup butter.  Mix well.  Sprinkle over sweet potato mixture.

Bake for 25-30 minutes.
