Holiday Cards & Toys For Tots

I’ve been working on ordering my Christmas cards to mail out to friends and family. There are a lot of people I know though that I prefer to send an e-card to rather than a traditional snail mail card. The problem with e-cards is that unless you pay and subscribe to a site, you tend to get e-cards that have advertising on them. I don’t want to do either. I have just found a way to not only send great, high quality free e-cards, but also donate to a fabulous cause, Toys For Tots.

Dinner - Roasted Chicken

I went to the grocery this morning and one of the items I purchased was a whole roasting chicken.  When I got home I turned on the T.V. and was watching The Today Show and they did a cooking segment.  I found it interesting because the chef was the son of Camilla Parker Boles, the new wife of Prince Charles.  I didn’t even realize she had a son, much less a son that was a chef.

Anyway, he happened to be making a roasted chicken which is exactly what I was going to do for dinner.  The recipe is one his mother, Camilla, makes.  Normally the recipes on T.V. are so complicated are require so many unusual ingredients, that I don’t bother with them.  Today was different and I followed the recipe and we had a delicious dinner.  I highly recommend this one!

1 roasting chicken

olive oil

salt & pepper

2 lemons

Rub olive oil all over chicken.  Sprinkle with salt and pepper.  Pierce one whole lemon with a fork several times and then insert the entire lemon into the body cavity of the chicken.  Use 2nd lemon to squeeze lemon juice all over chicken.  Place chicken in roasting pan and put in 370 degree oven.  Time will depend on weight of chicken, mine was about 4 lbs. and I had it in the oven for 1 1/2 hours.

Gravy

Remove chicken from oven and pour juices from pan into another pan, heat.  Add 1 cup wine and 1/2 cup chicken stock.  Heat to boiling, season with salt & pepper to taste.

Desktop Tag

Well, I’ve learned something new today, I learned how to take a picture of my desktop!  Why did I need to take a picture of my desktop you ask?   I needed to take a picture of my desktop because The Pond tagged me in a Desktop Tag meme. This is probably the easiest meme I’ve ever done once I was told how to get the desktop picture!

You’ll probably recognize the picture in my desktop background as Mt. Rushmore. My husband, daughter and I visited here summer before last in our first cross-country driving vacation. We had a blast and I highly recommend the entire area to anyone looking for a great vacation spot.
