Dinner – Roasted Chicken

I went to the grocery this morning and one of the items I purchased was a whole roasting chicken.  When I got home I turned on the T.V. and was watching The [tag]Today Show[/tag] and they did a cooking segment.  I found it interesting because the chef was the son of [tag]Camilla Parker Boles[/tag], the new wife of [tag]Prince Charles[/tag].  I didn’t even realize she had a son, much less a son that was a chef.

Anyway, he happened to be making a roasted chicken which is exactly what I was going to do for dinner.  The recipe is one his mother, Camilla, makes.  Normally the recipes on T.V. are so complicated are require so many unusual ingredients, that I don’t bother with them.  Today was different and I followed the recipe and we had a delicious dinner.  I highly recommend this one!

1 roasting chicken

olive oil

salt & pepper

2 lemons

Rub olive oil all over chicken.  Sprinkle with salt and pepper.  Pierce one whole lemon with a fork several times and then insert the entire lemon into the body cavity of the chicken.  Use 2nd lemon to squeeze lemon juice all over chicken.  Place chicken in roasting pan and put in 370 degree oven.  Time will depend on weight of chicken, mine was about 4 lbs. and I had it in the oven for 1 1/2 hours.

Gravy

Remove chicken from oven and pour juices from pan into another pan, heat.  Add 1 cup wine and 1/2 cup chicken stock.  Heat to boiling, season with salt & pepper to taste.
