Four Foods on Friday

I am running so behind lately! I feel like I’m getting some things done, but then I’m falling behind on others. With school in session, I’m back to getting up before the sun comes up and getting started on my day. However, I’m still not getting things done, like this meme for example, this should have all ready been posted! So, without further delay, here are this week’s questions and my answers for Four Foods on Friday.

#1. Artichokes. Love em or leave em? I really enjoy artichokes, but I don’t cook them myself. I enjoy them mixed into pastas and dips.

#2. What’s your favorite kind of bean? I enjoy black-eyed peas when they are made cajun style, they have a kick! My favorite though are fresh from the garden (not mine since I don’t have a garden), cooked with bacon… YUM!

#3. Share a recipe for any kind of cake. Hershey’s Perfectly Chocolate Chocolate Cake

2 c. sugar
1 3/4 c flour
3/4 c. Hershey’s Cocoa
1 1/2 t. baking powder
1 1/2 t. baking soda
1 t. salt
2 eggs
1 c. milk
1/2 c. oil
2 t. vanilla extract
1 c. boiling water

Combine dry ingredients in a large bowl. Add eggs, milk, oil and vanilla. Beat for 2 minutes on medium speed. Stir in boiling water. Batter will be thin. Pour into two 9″ round cake pans. Bake in pre-heated 350F oven for 30-35 minutes. Cool 10 minutes and remove to wire racks. Cool completely before frosting.

I’ll give the frosting recipe in another post!

#4. What’s your favorite dairy product? Currently? It has to be Dannon Light & Fit Vanilla Yogurt. This stuff is fabulous! I put fresh cut up fruit in the bottom of a bowl, top with yogurt and sprinkle organic granola on top and it tastes just like the yogurt parfait from McD’s!

    Heidi – This cake recipe makes the moistest cake I’ve ever eaten! The batter is super thin, but it bakes up beautifully.

    I was looking for a non-fat (or at least, the lowest fat possible) yogurt that still had some flavor and I am very happy with what I found with the Dannon Light & Fit Vanilla. I love mixing it with fresh fruit and some granola. Even my 12 year old has been eating it!

    My grocery store (Giant Eagle) makes a great fat-free banana yogurt. I love to slice up a small banana, then mix it with the container of yogurt in a bowl. It’s practically a dessert!
