Four Foods on Friday #49

Can I just say how thankful I am that today is Friday?! Actually, I wish it were all ready Friday evening so I could sit back and relax, it’s been a much busier week than what is normal for us. I am in need of some down time. First though, my daughter has to get through her band test today (playing in front of the rest of the band) and I have to get through my first test in my job training (that I haven’t had time to study for).

I am going to kick of the day with my favorite meme, Four Foods on Friday.

This weeks questions and my answers:

#1. Turnips. Love em or leave em? I’ve never cooked turnips myself, but my mom has been known to cook one along with her potatoes and then mash it in with mashed potatoes. I actually think it tastes really good, it gives the mashed potatoes just a little zing!

#2. What’s your favorite roasted dish? That would be a very long list, but if I have to pick just one, I would have to probably go with roasted veggies. We like to use red potatoes, green pepper, onion and mushrooms together.

#3. Salsa. What kind do you like? I don’t care much for cilantro, so I prefer salsas that don’t have to much of it mixed in. I like it to be somewhere between mild and hot.

#4. Share directions on how to make your favorite quick meal, meaning start to finish in about 30 minutes or less. I don’t know if I have one that’s 30 minutes or less, but this is what I made last night.

Turkey and rice

mix one can cream of mushroom soup with 3/4 c. rice, 1 c. water and 1/4 tsp. pepper. Lay skinless, boneless turkey breast pieces on top and sprinkle with paprika. Bake at 375 for 45 minutes and serve.

I forgot about roasted veggies. I really like all the ones you mentioned, except I would have red bell pepper instead of green. (green is not supposed to be good for fibromyalgia)

I am the opposite about Salsa, I like a thick chunky salsa with large tomato chunks, and tons of cilantro. I have always been a fan of cilantro in salsa. I do love turnips though, my favorite roasted dish is my wife’s specialty BBQ Pork Roast, which is done in a crock pot and slow roasted for about 10 hours. The BBQ sauce is roasted right into the meat and the meat falls apart on the fork after 10 hours. Seriously, you just scrape it up and put it on a bun and voila, delicious every bite.

Favorite 30 minute mean = Boiling Pasta with a Jar of Marinara Sauce / and a pre-packaged Ready Mix Salad pack with some Italian Dressing.

Anna – We don’t mix turnips with sour cream, we mix them in and mash them with our regular mashed potatoes. We make our mashed potatoes with butter, milk, salt and pepper.

Charla – I like using red peppers in my roasted veggies too. They look even more appetizing and add color to the dish. It’s interesting to learn they may have more health benefits too!

I love my salsa spicy but not too sour with lots of cilantro. Turkey and baked rice sounds heavenly. I’ll have to try it sometime.
