I love my salsa spicy but not too sour with lots of cilantro. Turkey and baked rice sounds heavenly. I'll have to try it sometime.

Charla - I like using red peppers in my roasted veggies too. They look even more appetizing and add color to the dish. It's interesting to learn they may have more health benefits too!

Anna - We don't mix turnips with sour cream, we mix them in and mash them with our regular mashed potatoes. We make our mashed potatoes with butter, milk, salt and pepper.

I am the opposite about Salsa, I like a thick chunky salsa with large tomato chunks, and tons of cilantro. I have always been a fan of cilantro in salsa. I do love turnips though, my favorite roasted dish is my wife's specialty BBQ Pork Roast, which is done in a crock pot and slow roasted for about 10 hours. The BBQ sauce is roasted right into the meat and the meat falls apart on the fork after 10 hours. Seriously, you just scrape it up and put it on a bun and voila, delicious every bite.

Favorite 30 minute mean = Boiling Pasta with a Jar of Marinara Sauce / and a pre-packaged Ready Mix Salad pack with some Italian Dressing.

I forgot about roasted veggies. I really like all the ones you mentioned, except I would have red bell pepper instead of green. (green is not supposed to be good for fibromyalgia)
