    Wow, doesn’t she look fabulous? And her hands are beautiful! (Also, the spud peeling idea is pretty good. I think this would be a grate (ha ha) way to have potatoes partially cooked for hash browns while also speeding up the peeling process. (The best hash browns are made from partially-cooked and cooled spuds, I think.)

    Mimi – I’ve heard that partially cooked potatoes do make the best hash browns. I’ve also heard that using a cast iron skillet can make a good difference.
