It’s been so hectic, I can’t believe that I’ve missed my favorite meme the past two weeks. I’m almost late getting this week in, but here it is, my answers to this weeks questions.
#1. Clair’s question. What’s the biggest kitchen blunder you’ve made? My biggest blunder was when I made a corn souffle (sort of a corn casserole) and I left the main ingredient out, no corn!
#2. What’s your favorite snow day beverage? When it’s really cold, I love a hot cocoa with some Bailey’s in it.
#3. What’s your favorite way to eat celery? I like it with peanut butter or ranch dressing.
#4. What’s the most most unappealing looking food you can think of? The first thing that came to mind was squid, but then I thought about countries that eat bugs as a delicacy and that really grosses me out!

It’s Friday! And, time for my favorite weekly meme, Four Foods on Friday.
This week’s questions and my answers:
#1. Do you celebrate Memorial Day with a picnic, cookout, road trip or some other way? Not usually, and this year, it’s just a normal weekend for us. I am working hours on all 3 days this weekend and my daughter has yet another big school project to work on So, hopefully we’ll get some time to be outside by the pool, and the weather will cooperate!
#2. What are staples at your summer time cookouts? We grill out all year long, so probably the only thing different would be that we eat more potato salad in the summer!
#3. What drink do you find most refreshing on a hot summer day? Freshly brewed iced tea, with lots of ice!
#4. Share a recipe for a picnic side dish. That would have to be for potato salad
Peel, chop into bite size pieces, and boil as many potatoes as you would like in your salad. Also boil a few eggs, both to add to the salad and as garnish. Allow the potatoes to cool once they’re done cooking. Then, in a large bowl, combine about a cup of mayonnaise (or Miracle Whip), 2 T yellow mustard, a tsp. of salt, 1/4 tsp of pepper and a tsp of celery salt, all to taste. Chop up all but one of the boiled eggs and add to salad, mix everything together. If you like, you can also add a dab of relish. Slice the last egg and position slices on top of potato salad. Sprinkle paprika all over the top.

Finally, Friday!
It’s a good week, ending in a good weekend. My nephew Greg is graduating with his Master’s degree tomorrow, WOW! We’re all so very proud of him.
But, before the weekend begins, I have 7 hours to work today and, then, I can kick of the weekend. I’m going to get a head start with my favorite meme, Four Foods on Friday.
This week’s questions and my answers:
#1. blueyes’ question. What’s your favorite seafood recipe? I love a simple shrimp scampi. Melt butter in a pan, add chopped garlic and a few chopped scallion onions. Add peeled shrimp and cook until done. Serve over any type of noodles.
#2. Italian Ice. Like it, love it or leave it? I like it, but rarely have it.
#3. What’s your favorite crunchy food? (anything – pickles, chips, fruit, etc.) I love to crunch on tortilla chips, extra salt!
#4. Have you ever eaten so much of something that you felt or got sick? Ummm, yes. Years ago, while still in college, I went home to my parent’s house for Thanksgiving. After barely eating (I was a broke college student), I gorged myself on turkey and all the side dishes. I was miserable, and yes, I did end up throwing up! I’ve never allowed myself to eat that much again, i learned my lesson.

Technically, these are the questions from last week. But, since I was away last week (feeding my fabric addiction), and Val, who is recovering from surgery, hasn’t been able to post new questions, I’m going to use the opportunity to play catch up. If you’d like to participate, and who wouldn’t, head on over to Fun, Crafts and Recipes and give Val a shout. While you’re there, you might want to wish her a speedy recovery!
These questions relate to the fact that Val just had surgery and, as a result, is going to be on a special diet. The questions and my answers:
#1. What’s your favorite flavor of yogurt? I love the Dannon Light & Fit Vanilla. It’s got a nice smooth flavor and tastes great with fresh fruit added in or by itself.
#2. Got a recipe for a smoothie? I really haven’t made a smoothie in a long time, particularly since I don’t know where my blender made off to! I’ll be looking forward to reading answers of other participants on this one.
#3. Got a recipe for split pea soup? Ummm, EEWWWW! Don’t need that recipe!
#4. What’s your favorite kind of pudding? I’m not a big fan of pudding, although, I do enjoy the vanilla pudding with bananas and vanilla wafers. I also love a really good bread pudding with rum sauce. Yum!

This week’s questions and my answers:
#1. Sarafina’s suggestion. How far would you be willing to travel to satisfy a food craving? Well now, that sort of depends on what the craving is for. If it’s for a great dinner, say steak, I’d probably be willing to travel farther than if it were a craving for something like ice cream.
#2. Have you ever eaten rabbit? What did you think? Yes, when I was a kid, my dad was a hunter and would bring home rabbit. Truthfully, I don’t really remember the actual taste, I only remember being told it would taste like chicken. I’ve always wondered why everything is supposed to taste like chicken!
#3. Have you ever made your own bread? How? I have made my own bread using a bread maker mostly. Years ago I did help my mom make bread from scratch, no automation involved. When my parents and I lived overseas, it was difficult to buy loaves of bread, so my mom would make it.
#4. Where do you usually spend Easter and what do you usually eat? We now spend Easter at home and I usually make a ham with scalloped potatoes and a few other side dishes. This year was a bit hectic and I didn’t feel well, so we stayed home and ate a casserole that my husband made. I never even made it to the store to buy the ham. I still feel bad about that.
